How To Make Miso Aubergine

Ingredients
- 4 aubergines, halved lengthwise
- 4 tbsp miso paste
- 4 tbsp mirin
- 2 tbsp soy sauce
- 2 tbsp honey
- 2 tbsp vegetable oil
- 2 spring onions, chopped (for garnish)
- Sesame seeds (for garnish)
- Steamed rice, to serve
Instructions

Preheat the grill to medium-high heat.

Score the flesh of the aubergine halves in a crisscross pattern.

In a bowl, whisk together miso paste, mirin, soy sauce, honey, and vegetable oil.

Brush the miso sauce on the aubergine halves, ensuring they are well coated.

Place the aubergines on the grill, skin side down, and cook for about 10-15 minutes until the flesh is tender and charred.

Flip the aubergines and brush more miso sauce on the flesh side. Cook for an additional 5 minutes.

Remove the aubergines from the grill and garnish with chopped spring onions and sesame seeds.

Serve the miso aubergine with steamed rice.
