How To Make Leeks with Miso Dressing, Eggs & Keta

- 4 leeks, trimmed and cleaned
- 2 tablespoons miso paste
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 4 eggs
- 100g keta (salted salmon roe)
Instructions

Preheat the grill or broiler.

In a small bowl, whisk together the miso paste, soy sauce, rice vinegar, and honey until well combined.

Place the leeks on a baking sheet and brush with the miso dressing. Reserve some dressing for later.

Grill or broil the leeks for about 8-10 minutes, until tender and slightly charred.

In a separate pan, fry the eggs to your desired doneness.

Divide the grilled leeks among serving plates and top each with a fried egg.

Drizzle the reserved miso dressing over the eggs and sprinkle with keta.
