- 4 parsnips, peeled and cut into 1-inch thick sticks
- 2 tablespoons maple syrup
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- Salt and pepper, to taste

Preheat the oven to 400°F (200°C).

In a large bowl, combine the maple syrup, olive oil, cinnamon, nutmeg, ginger, salt, and pepper.

Add the parsnip sticks to the bowl and toss until they are well coated with the maple spice mixture.

Spread the parsnips in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 30 minutes, or until the parsnips are tender and golden brown, flipping them halfway through cooking.
