How To Make Spiced Parsnip & Cauliflower Soup

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 2 parsnips, peeled and chopped
- 1 small head of cauliflower, chopped
- 4 cups vegetable broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened and fragrant, about 5 minutes.

Add the ground cumin, ground coriander, turmeric, and cayenne pepper (if using) to the pot. Stir well to coat the onions and garlic with the spices.

Add the chopped parsnips and cauliflower to the pot, and stir to combine with the spices. Cook for another 2 minutes.

Pour in the vegetable broth, and bring to a boil. Reduce the heat, cover the pot, and simmer for 20-25 minutes, or until the parsnips and cauliflower are tender.

Using an immersion blender or a regular blender, puree the soup until smooth and creamy. Season with salt and pepper to taste.

Serve the soup hot, garnished with fresh cilantro.
