Ingredients

  • 2 medium carrots, peeled and diced
  • 2 parsnips, peeled and diced
  • 1 sweet potato, peeled and diced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • For the spiced onions:
  • 1 onion, thinly sliced
  • 1 tbsp all-purpose flour
  • 1 tsp paprika
  • Salt to taste
  • Vegetable oil for frying

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.

  2. Add the carrots, parsnips, sweet potato, cumin, coriander, and turmeric. Cook for 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 30 minutes, or until the vegetables are tender.

  4. While the soup is simmering, prepare the spiced onions. In a shallow bowl, combine the flour, paprika, and salt. Toss the sliced onions in the flour mixture until coated.

  5. In a deep pan, heat vegetable oil for frying. Fry the coated onions until crispy and golden brown. Remove from oil and place on a paper towel to drain excess oil.

  6. Once the soup is cooked, use an immersion blender or transfer to a blender in batches to puree until smooth. Season with salt and pepper to taste.

  7. Serve the soup hot, topped with a handful of crisp spiced onions.
