Ingredients

  • 2 cups grated parsnips
  • 1 cup all-purpose flour
  • 1/2 cup maple syrup
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a square baking dish.

  2. In a mixing bowl, combine the grated parsnips, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. In a separate bowl, whisk together the maple syrup, vegetable oil, and eggs until well combined.

  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped walnuts, if desired.

  5. Pour the batter into the prepared baking dish and smooth the top.

  6. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the dish for 10 minutes, then transfer to a wire rack to cool completely.

  8. Serve slices of the parsnip & maple syrup cake and enjoy!
