  • 1.5 pounds of baby potatoes, halved
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of fresh rosemary, chopped
  • 1 tablespoon of fresh thyme, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.

  2. Add the halved baby potatoes to the skillet and season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until the potatoes are golden brown and crispy.

  3. Add the minced garlic, rosemary, and thyme to the skillet. Cook for an additional 2-3 minutes until the garlic becomes fragrant.

  4. Remove from heat and garnish with fresh parsley before serving.
