Ingredients

  • 4 large potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tbsp butter
  • 2 tbsp Dijon mustard
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Place the potatoes in a large pot of salted water and bring to a boil. Cook for about 15-20 minutes or until fork tender.

  2. Drain the potatoes and return them to the pot. Add milk, butter, and Dijon mustard.

  3. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.

  4. Preheat the broiler in your oven.

  5. Transfer the mashed potatoes to a baking dish and sprinkle shredded cheddar cheese on top.

  6. Broil for about 5 minutes or until the cheese is melted and golden brown.

  7. Serve hot as a side dish.
