Serves:
Ingredients
- 4 chicken breasts
- 2 tbsp mustard
- 2 tsp dried sage
- 1 tbsp olive oil
- 1 celeriac, peeled and diced
- 2 cloves of garlic, minced
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
-
Preheat your oven to 375°F (190°C).
-
In a small bowl, mix together the mustard, dried sage, olive oil, salt, and pepper. Rub this mixture onto the chicken breasts.
-
Heat a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 3 minutes per side.
-
Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
-
While the chicken is cooking, place the diced celeriac and minced garlic in a pot. Cover with chicken broth and bring to a boil. Reduce heat to a simmer and cook until the celeriac is tender, about 15 minutes.
-
Drain the celeriac, reserving some of the cooking liquid. Mash the celeriac with a potato masher or immersion blender, adding reserved cooking liquid as needed to achieve desired consistency. Season with salt and pepper to taste.
-
Serve the mustard and sage chicken alongside the creamy celeriac mash.
