Preparation: 15 minutes
Cooking: 30 minutes
Total: 45 minutes

Serves:

Ingredients

  • 4 chicken breasts
  • 2 tbsp mustard
  • 2 tsp dried sage
  • 1 tbsp olive oil
  • 1 celeriac, peeled and diced
  • 2 cloves of garlic, minced
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. In a small bowl, mix together the mustard, dried sage, olive oil, salt, and pepper. Rub this mixture onto the chicken breasts.

  3. Heat a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 3 minutes per side.

  4. Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

  5. While the chicken is cooking, place the diced celeriac and minced garlic in a pot. Cover with chicken broth and bring to a boil. Reduce heat to a simmer and cook until the celeriac is tender, about 15 minutes.

  6. Drain the celeriac, reserving some of the cooking liquid. Mash the celeriac with a potato masher or immersion blender, adding reserved cooking liquid as needed to achieve desired consistency. Season with salt and pepper to taste.

  7. Serve the mustard and sage chicken alongside the creamy celeriac mash.
