Ingredients

  • 4 turkey breasts
  • 1 cup breadcrumbs
  • 2 lemons (zest and juice)
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups broccoli florets
  • 1 cup cooked beans (such as cannellini or black beans)
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a shallow bowl, combine the breadcrumbs, lemon zest, minced garlic, thyme, salt, and pepper.

  3. Dip each turkey breast into the lemon juice, then coat with the breadcrumb mixture.

  4. Place the turkey breasts on a baking sheet and bake for 20-25 minutes, or until golden brown and cooked through.

  5. While the turkey is cooking, steam the broccoli florets until tender. Drain and set aside.

  6. In a large bowl, mash the cooked beans with a fork. Add the steamed broccoli and olive oil, and mash until well combined.

  7. Serve the lemony crumbed turkey with the broccoli-bean smash on the side.
