Serves:

Ingredients

  • 2 cups of mixed root vegetables (carrots, parsnips, and turnips), peeled and diced
  • 4 large potatoes, peeled and diced
  • 2 tablespoons of butter
  • 1 tablespoon of whole grain mustard
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Fill a large pot with water and bring it to a boil. Add a pinch of salt.

  2. Add the diced root vegetables and potatoes to the boiling water. Cook until tender, about 15-20 minutes.

  3. Drain the cooked vegetables and return them to the pot.

  4. Add butter, mustard, salt, and pepper to the pot. Mash the vegetables until smooth and creamy.

  5. Adjust the seasoning according to your taste.

  6. Transfer the mash to a serving dish and garnish with chopped fresh parsley.
