How To Make Cheesy Broccoli-Stuffed Potatoes

Ingredients
- 4 medium-sized baking potatoes
- 2 cups broccoli florets, steamed and chopped
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons butter
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

Wash the potatoes and prick them with a fork. Bake the potatoes on a baking sheet for about 45-60 minutes, or until tender.

While the potatoes are baking, steam the broccoli florets until tender. Chop them into small pieces.

Once the potatoes are cooked, remove them from the oven and let them cool slightly. Slice off the top of each potato and scoop out the flesh, leaving a shell.

In a mixing bowl, combine the potato flesh, chopped broccoli, shredded cheddar cheese, sour cream, butter, salt, and pepper. Mix well until the ingredients are evenly incorporated.

Spoon the broccoli and cheese mixture back into the potato shells, filling them generously.

Place the stuffed potatoes back on the baking sheet and return them to the oven for another 10-15 minutes, or until the cheese is melted and bubbly.
