Ingredients

  • 2 cups shredded cooked turkey
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • 4 cups chicken broth
  • Salt and pepper, to taste

Instructions

  1. In a large pot, sauté onion, carrot, and celery until tender.

  2. Add garlic and cook for another minute.

  3. Add shredded turkey, bay leaf, thyme, and chicken broth.

  4. Bring to a boil, then reduce heat and simmer for 20 minutes.

  5. Remove bay leaf and season with salt and pepper.
