Ingredients

  • 1 pie crust
  • 2 cups of cooked leftover turkey
  • 1 cup of frozen mixed vegetables
  • 1/2 cup of diced onion
  • 1/2 cup of diced celery
  • 1/2 cup of diced carrots
  • 3 tbsp of butter
  • 3 tbsp of flour
  • 2 cups of chicken stock
  • 1 tsp of dried thyme
  • 1 tsp of salt
  • 1/4 tsp of black pepper

Instructions

  1. Preheat oven to 400°F.

  2. In a pot, melt butter over medium heat. Add onions, celery, and carrots; cook until tender.

  3. Stir in flour and cook for 1-2 minutes. Slowly add chicken stock, stirring constantly to prevent lumps.

  4. Add in thyme, salt, black pepper, turkey, and mixed vegetables; mix well.

  5. 5.Roll out pie crust and place in a 9-inch pie pan. Pour turkey mixture into the crust and bake for 30-40 minutes until golden brown.

  6. Serve hot.
