Ingredients
- 8 oz rice noodles
- 1 lb shrimp, peeled and deveined
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 2 red chilies, thinly sliced
- 2 eggs
- 1 cup bean sprouts
- 1/2 cup chopped green onions
- 1/4 cup chopped roasted peanuts
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp brown sugar
Instructions

Cook the rice noodles according to package instructions. Drain and set aside.

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and red chilies, and cook for 1 minute.

Push the garlic and chilies to the side of the skillet and add the shrimp. Cook for 2-3 minutes until pink and cooked through. Remove the shrimp from the skillet and set aside.

In the same skillet, scramble the eggs. Once cooked, add the cooked noodles, bean sprouts, green onions, and cooked shrimp.

In a small bowl, whisk together the fish sauce, soy sauce, lime juice, and brown sugar. Pour the sauce over the noodle mixture and toss to combine.

Cook for another 2-3 minutes, until heated through and well-coated with the sauce.

Serve hot, garnished with chopped peanuts.
