How To Make Bigos (Hunter’s Stew)

Ingredients

  • 1 lb of pork shoulder, diced
  • 1 lb of beef stew meat, cubed
  • 4 slices of bacon, chopped
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of sauerkraut
  • 2 cups of sliced cabbage
  • 2 cups of mushrooms, sliced
  • 2 bay leaves
  • 1 tsp of dried thyme
  • 1 tsp of paprika
  • Salt and pepper to taste
  • 1 cup of beef broth
  • 1 cup of red wine

Instructions

  1. In a large pot, cook the bacon until crisp. Remove the bacon and set aside, leaving the drippings in the pot.

  2. Brown the pork shoulder and beef stew meat in the bacon drippings until browned on all sides. Remove the meat and set aside.

  3. In the same pot, sauté the onion and garlic until softened.

  4. Add the sauerkraut, cabbage, mushrooms, bay leaves, thyme, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.

  5. Return the meat to the pot and add the beef broth and red wine. Bring to a boil, then reduce heat and simmer for 2-3 hours, or until the meat is tender and flavors are well combined.

  6. Serve hot with crusty bread or boiled potatoes.
