- 1.5 pounds beef stew meat
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 potatoes, peeled and diced
- 1 cup frozen peas
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions

In a large plastic bag, combine flour, salt, and black pepper. Add beef stew meat to the bag and shake until meat is coated.

Heat vegetable oil in a large pot over medium heat. Add the coated beef stew meat and cook until browned on all sides. Remove meat from pot and set aside.

In the same pot, add diced onion and minced garlic. Cook until onion is translucent, about 5 minutes.

Add chopped carrots, celery, potatoes, and frozen peas to the pot. Stir to combine.

Return the browned beef stew meat to the pot. Pour in beef broth and add tomato paste, bay leaf, dried thyme, and dried rosemary.

Bring the stew to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the meat is tender and the flavors are well blended.

Remove bay leaf from the pot before serving.
