Ingredients

  • 1 whole fish (such as sea bass or red snapper), cleaned and scaled
  • 3 cloves of garlic, minced
  • 2 tablespoons of soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of fish sauce
  • 1 tablespoon of lime juice
  • 1 tablespoon of sugar
  • 1 red chili, sliced
  • 3 spring onions, sliced
  • A handful of cilantro, chopped

Instructions

  1. Place the fish on a heatproof dish and make a few slashes on both sides.

  2. In a small bowl, mix together the garlic, soy sauce, oyster sauce, fish sauce, lime juice, and sugar.

  3. Pour the sauce evenly over the fish, making sure to get some inside the slashes.

  4. Scatter the chili, spring onions, and cilantro over the fish.

  5. Place the dish in a steamer and steam for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

  6. Carefully remove the dish from the steamer and serve hot.
