How To Make Seared Steak with Celery & Pepper Caponata

Ingredients
- 4 steaks (1-inch thick)
- 2 tablespoons olive oil
- 2 celery stalks, diced
- 1 red or yellow bell pepper, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon capers
- 2 tablespoons red wine vinegar
- 1 teaspoon sugar
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Season the steaks with salt and pepper on both sides.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steaks and cook for 4-5 minutes per side for medium-rare, or until desired doneness. Remove from the skillet and let them rest for a few minutes.

In the same skillet, heat the remaining tablespoon of olive oil. Add the celery, bell pepper, onion, and minced garlic. Sauté until the vegetables are tender, about 5 minutes.

Stir in the capers, red wine vinegar, and sugar. Cook for an additional 2-3 minutes.

Slice the steaks against the grain and serve with the celery and pepper caponata. Garnish with fresh parsley.
