How To Make Courgette Caponata with Thyme & Garlic Chicken

Ingredients
- 4 chicken breasts
- 2 courgettes, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 can of diced tomatoes
- 2 tablespoons of tomato paste
- 2 tablespoons of red wine vinegar
- 1 tablespoon of capers
- 1 tablespoon of sugar
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions

Preheat the oven to 180°C (350°F).

Season the chicken breasts with salt, pepper, and dried thyme. Heat olive oil in a large skillet over medium heat and cook the chicken until browned on both sides. Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes or until cooked through.

In the same skillet, add a little more olive oil if needed and sauté the onion, garlic, and red bell pepper until softened.

Add the diced courgettes and cook for another 5 minutes until slightly tender.

Stir in the diced tomatoes, tomato paste, red wine vinegar, capers, sugar, and season with salt and pepper. Cook for 10 minutes until the mixture thickens.

Serve the chicken breasts topped with the courgette caponata mixture. Enjoy!
