  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 4 cups turkey or chicken broth
  • 1 cup cooked wild rice
  • 2 cups cooked turkey, shredded
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk or cream

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.

  2. Pour in the turkey or chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.

  3. Stir in the cooked wild rice, shredded turkey, dried thyme, salt, and black pepper. Simmer for another 15 minutes.

  4. Stir in the milk or cream and heat until warmed through, about 5 minutes. Do not boil.
