Ingredients

  • 1 lb steak, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves of garlic, minced
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh parsley for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat.

  2. Add the steak pieces and cook until browned. Remove from the pot and set aside.

  3. In the same pot, add the onion, carrots, celery, and garlic. Cook until vegetables are softened.

  4. Return the steak to the pot and add the beef broth, diced tomatoes, dried thyme, dried rosemary, salt, and pepper.

  5. Bring the soup to a boil, then reduce heat to low and let it simmer for about 2 hours, or until the steak is tender.

  6. Serve the steak soup hot, garnished with fresh parsley.
