How To Make Slow Cooker Tomato Basil Soup Recipe

Rich and flavorful tomato soup with a hint of fresh basil made in a slow cooker.

Serves:

Ingredients

  • 2 cans (28 oz each) whole peeled tomatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup heavy cream
  • Salt and pepper, to taste

Instructions

  1. Add tomatoes (with juice), onion, garlic, and broth to a slow cooker.

  2. Cook on high for 4 hours or low for 8 hours.

  3. Add chopped basil and puree soup with an immersion blender or transfer to a blender in batches.

  4. Return soup to slow cooker and stir in heavy cream. Season with salt and pepper to taste.

  5. Heat on high for 30 minutes before serving.
