Ingredients

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 cups vegetable broth
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Optional toppings: sour cream, chopped cilantro, diced avocado

Instructions

  1. In a large pot, sauté the onion, garlic, and jalapeno until softened.

  2. Add the cumin and chili powder, and cook for another minute.

  3. Add the black beans and vegetable broth to the pot, and bring to a simmer.

  4. Use an immersion blender or regular blender to puree the soup until smooth.

  5. Stir in the lime juice, and season with salt and pepper to taste.

  6. Serve hot, and top with desired toppings if desired.
