  • 2 cans (15 oz each) of white beans, rinsed and drained
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 tsp dried rosemary
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add onion and garlic, sauté for about 5 minutes or until softened.

  3. Add beans, broth, rosemary, and red pepper flakes.

  4. Bring to a boil, reduce heat, cover, and simmer for about 30 minutes.

  5. Use an immersion blender (or transfer to a blender) and blend until smooth.

  6. Season with salt and black pepper to taste.
