Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped green onions
  • 1/4 cup soy sauce
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1 tbsp sesame oil
  • 2 eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups chicken broth
  • 2 cups chopped bok choy
  • 1 cup sliced shiitake mushrooms
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bamboo shoots

Instructions

  1. In a large bowl, combine ground pork, breadcrumbs, green onions, soy sauce, garlic, ginger, sesame oil, eggs, salt, and black pepper. Mix well.

  2. Shape the mixture into large meatballs, about the size of a lion’s head.

  3. In a large pot, bring the chicken broth to a boil. Add the meatballs and simmer for 20 minutes.

  4. Add bok choy, shiitake mushrooms, carrots, and bamboo shoots to the pot. Cook for an additional 10 minutes, until vegetables are tender.

  5. Serve the meatballs and vegetables in bowls with the broth. Enjoy!
