Ingredients
- 1 whole chicken, cut into pieces
- 1 onion, diced
- 3 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 bay leaf
- 6 cups chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish

In a large pot, heat some oil over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender, about 5 minutes.

Add chicken pieces to the pot and cook until browned on all sides, about 5-7 minutes.

Pour in chicken broth, dried thyme, and bay leaf. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour, until the chicken is cooked through and tender.

Remove the chicken from the pot and shred the meat. Discard the bones and return the shredded chicken back to the pot.
