Ingredients

  • 4 bacon slices, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 potatoes, peeled and diced
  • 2 cups of corn kernels
  • 2 cups of chicken broth
  • 1 cup of milk
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot.

  2. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent and fragrant.

  3. Add the diced potatoes, corn kernels, chicken broth, milk, and heavy cream to the pot. Bring to a simmer and cook until the potatoes are tender, about 15-20 minutes.

  4. Using an immersion blender or a regular blender, blend about half of the soup until smooth and creamy. Be careful with the hot liquid.

  5. Return the blended soup to the pot and stir well to combine. Season with salt and pepper to taste.

  6. Serve hot, garnished with the crispy bacon and chopped fresh parsley.
