Ingredients

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tomatoes, diced
  • 2 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, sliced avocado, chopped cilantro

Instructions

  1. In a large pot, sauté the onion, garlic, and bell pepper until softened.

  2. Add the diced tomatoes, black beans, vegetable broth, cumin, and chili powder to the pot.

  3. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.

  4. Use an immersion blender or transfer half of the soup to a blender and blend until smooth.

  5. Return the blended soup to the pot and season with salt and pepper to taste.

  6. Serve hot with desired toppings.
