- 2 large cucumbers, peeled and diced
- 1 small red onion, finely chopped
- 1 jalapeno pepper, seeds and ribs removed, finely chopped
- 1/4 cup fresh cilantro, chopped
- juice of 2 limes
- salt and pepper to taste
