  • 2 cans (400g each) diced tomatoes
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 tsp sugar
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. In a large pot, heat some oil and cook the onions and garlic until softened.

  2. Add the diced tomatoes and sugar. Cook for about 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 15 minutes.

  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.

  5. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper.

  6. Simmer for another 5 minutes, then serve hot, garnished with fresh basil.
