  • 1 lb mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large soup pot, melt butter over medium heat.

  2. Add chopped onions and minced garlic. Cook until onions are translucent.

  3. Add sliced mushrooms and cook until they release their liquid and turn golden brown.

  4. Sprinkle flour over the mushroom mixture and stir well to coat.

  5. Gradually pour in the broth while stirring constantly to prevent lumps. Bring to a simmer.

  6. Reduce heat to low and let the soup simmer for about 20 minutes.

  7. Using an immersion blender or a regular blender, puree the soup until smooth.

  8. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

  9. Simmer for an additional 5 minutes to heat through.

  10. Serve hot, garnished with fresh parsley.
