Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 8 ounces mushrooms, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 1/2 cup uncooked rice
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced chicken and cook until browned.

  2. Remove the chicken from the pot and set aside. In the same pot, add more oil if needed and sauté the onions, garlic, mushrooms, carrot, and celery until softened.

  3. Add the chicken back into the pot along with the uncooked rice, chicken broth, dried thyme, salt, and pepper. Bring to a boil.

  4. Reduce heat to low and let simmer for about 20-25 minutes or until the rice is cooked and the flavors have melded together.

  5. Serve hot, garnished with fresh parsley.
