  • 1.5 lbs beef stew meat, cut into bite-sized pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 1 red bell pepper, diced
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the beef from the pot and set aside.

  2. In the same pot, add the diced onion and minced garlic. Cook until the onion is soft and translucent.

  3. Stir in the sweet paprika and caraway seeds, cooking for an additional minute to release their flavors.

  4. Return the browned beef to the pot and pour in the beef broth. Bring to a boil and then reduce heat to low. Cover and simmer for 1.5 hours, or until the beef is tender.

  5. Add the diced tomatoes, red bell pepper, carrots, and potatoes to the pot. Season with salt and pepper to taste. Continue to simmer for another 30 minutes, or until the vegetables are cooked through and tender.

  6. Serve the beef goulash soup hot, garnished with fresh chopped parsley.
