Ingredients

  • 1 lb pork shoulder, cubed
  • 1 butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp paprika
  • 1 tsp caraway seeds
  • 1 cup beef broth
  • 1 cup tomato sauce
  • Salt and pepper to taste
  • For the cobbler crust:
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp cold unsalted butter, cubed
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 325°F (165°C).

  2. Heat the olive oil in a large oven-safe pot over medium heat. Add the pork cubes and cook until browned on all sides. Remove the pork from the pot and set aside.

  3. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent and fragrant.

  4. Add the paprika and caraway seeds to the pot, stirring well to coat the onion and garlic.

  5. Return the pork to the pot, along with the butternut squash cubes, beef broth, and tomato sauce. Season with salt and pepper to taste.

  6. Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven. Cook for 1.5 to 2 hours, or until the pork is tender and the squash is cooked through.

  7. While the goulash is cooking, prepare the cobbler crust. In a mixing bowl, combine the flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers, until the mixture resembles coarse crumbs. Stir in the milk until the dough comes together.

  8. After the goulash has cooked, remove the pot from the oven. Increase the oven temperature to 375°F (190°C).

  9. Drop spoonfuls of the cobbler dough onto the surface of the goulash, creating a rustic topping.

  10. Place the pot back in the oven and bake for an additional 15-20 minutes, or until the cobbler crust is golden brown and cooked through.
