Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 tablespoons vegetable oil
  • 2 onions, diced
  • 3 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups beef broth
  • 1 cup crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 red bell peppers, diced
  • 1/4 cup sour cream (optional)
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

  2. Add the diced onions to the pot and cook until they are translucent. Add the minced garlic, paprika, caraway seeds, salt, and black pepper. Stir well to combine.

  3. Return the beef to the pot and add the beef broth, crushed tomatoes, and tomato paste. Bring to a boil, then reduce heat to low and simmer for 1 hour, covered.

  4. After 1 hour, add the diced red bell peppers to the pot and continue to simmer for an additional hour, uncovered, until the beef is tender and the sauce has thickened.

  5. Serve the beef goulash hot, garnished with a dollop of sour cream (if desired) and fresh parsley. Enjoy!
