Serves:
Ingredients
- 1 lb mixed seafood (such as shrimp, mussels, clams, calamari)
- 1/4 cup olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 1 tsp red pepper flakes
- 1 cup white wine
- 1 can crushed tomatoes (28 oz)
- 2 cups fish or vegetable broth
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Crusty bread, for serving
Instructions
-
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, garlic, and red pepper flakes. Cook until the onion is translucent, about 5 minutes.
-
Add the seafood to the pot and cook for a few minutes until it starts to turn opaque.
-
Pour in the white wine and let it simmer for 2 minutes to cook off the alcohol.
-
Add the crushed tomatoes and broth to the pot. Bring to a simmer, then reduce the heat to low and cover. Let the soup simmer for 30 minutes to allow the flavors to meld together.
-
Stir in the chopped parsley and season with salt and pepper to taste.
-
Serve the Zuppa Di Pesce Fra Di Avolo in bowls, with crusty bread on the side.
