Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups almond milk (or any non-dairy milk)
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, combine flour, sugar, baking powder, and salt.

  2. In a separate bowl, whisk together almond milk, melted coconut oil, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Don’t overmix; a few lumps are okay.

  4. Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.

  5. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes until golden brown.

  6. Serve immediately with your favorite toppings, such as fresh berries, maple syrup, or vegan butter.
