How To Make Easy Vegan Pancakes

Ingredients
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/4 cups almond milk (or any non-dairy milk)
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
Instructions

In a large mixing bowl, combine flour, sugar, baking powder, and salt.

In a separate bowl, whisk together almond milk, melted coconut oil, and vanilla extract.

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Don’t overmix; a few lumps are okay.

Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.

Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes until golden brown.
