Ingredients

  • 300g salmon fillets, cooked and flaked
  • 200g peas, cooked and mashed
  • 2 eggs
  • 2 spring onions, finely chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/2 cup breadcrumbs
  • 1 tsp lemon zest
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. In a large bowl, combine the cooked salmon, mashed peas, eggs, spring onions, mint leaves, breadcrumbs, lemon zest, salt, and pepper. Mix well.

  2. Shape the mixture into small patties and place them on a lined baking sheet.

  3. Heat olive oil in a frying pan over medium heat. Cook the fish cakes for 3-4 minutes on each side or until golden brown.

  4. Transfer the cooked fish cakes to a paper towel-lined plate to drain excess oil.

  5. Serve hot with your favorite sauce or dip.
