How To Make Salmon & Lemon Mini Fish Cakes

Ingredients
- 1 lb salmon fillet, cooked and flaked
- 1 lemon, zest and juice
- 2 green onions, finely chopped
- 1/4 cup breadcrumbs
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil

In a large bowl, combine the flaked salmon, lemon zest, lemon juice, green onions, breadcrumbs, mayonnaise, Dijon mustard, salt, and black pepper. Mix well.

Shape the mixture into small patties, about 2 inches in diameter.

Heat the vegetable oil in a skillet over medium heat. Cook the fish cakes for about 3-4 minutes per side, until golden brown and cooked through.

Serve the mini fish cakes hot, garnished with additional lemon zest and green onions if desired.
