Ingredients

  • 1 lb salmon fillet, cooked and flaked
  • 1 lemon, zest and juice
  • 2 green onions, finely chopped
  • 1/4 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil

Instructions

  1. In a large bowl, combine the flaked salmon, lemon zest, lemon juice, green onions, breadcrumbs, mayonnaise, Dijon mustard, salt, and black pepper. Mix well.

  2. Shape the mixture into small patties, about 2 inches in diameter.

  3. Heat the vegetable oil in a skillet over medium heat. Cook the fish cakes for about 3-4 minutes per side, until golden brown and cooked through.

  4. Serve the mini fish cakes hot, garnished with additional lemon zest and green onions if desired.
