How To Make Puy Lentils with Spinach & Sour Cherries

Ingredients
- 1 cup Puy lentils
- 2 cups spinach, chopped
- 1/2 cup dried sour cherries
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper, to taste
Instructions

Rinse the Puy lentils in cold water and drain.

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.

Add the cumin and paprika and cook for another minute.

Add the Puy lentils and 2 cups of water to the pot. Bring to a boil and then reduce heat to low. Simmer for about 20 minutes, or until the lentils are tender.

Stir in the chopped spinach and dried sour cherries. Cook for another 5 minutes, until the spinach is wilted.

Season with salt and pepper to taste.
