Ingredients

  • 1 cup Puy lentils
  • 8 oz smoked tofu, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bay leaf
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the Puy lentils under cold water and set aside.

  2. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook until vegetables are tender.

  3. Add diced smoked tofu and cook for another 5 minutes.

  4. Add Puy lentils, bay leaf, and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 30 minutes or until lentils are tender.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with fresh parsley.
