How To Make Puy Lentils with Smoked Tofu

Ingredients
- 1 cup Puy lentils
- 8 oz smoked tofu, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bay leaf
- 4 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Rinse the Puy lentils under cold water and set aside.

Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook until vegetables are tender.

Add diced smoked tofu and cook for another 5 minutes.

Add Puy lentils, bay leaf, and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 30 minutes or until lentils are tender.

Season with salt and pepper to taste.

Serve hot, garnished with fresh parsley.
