- 2 cups sweetcorn kernels
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup chopped spring onions
- 2 tablespoons chopped fresh parsley
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- Vegetable oil, for frying

In a large bowl, combine sweetcorn kernels, flour, cornmeal, spring onions, parsley, baking powder, salt, and black pepper.

Add beaten eggs to the bowl and mix well until the mixture is combined and sticky.

Heat vegetable oil in a deep skillet or frying pan over medium heat.

Drop spoonfuls of the sweetcorn mixture into the hot oil and flatten slightly with the back of the spoon.

Fry the beignets for 2-3 minutes on each side until golden brown and crispy.

Remove the beignets from the oil and transfer to a paper towel-lined plate to drain excess oil.
