How To Make Chipotle, Corn & Prawn Fritters with Avocado Purée

Ingredients
- 1 cup corn kernels
- 1/2 cup prawns, cooked and chopped
- 1/4 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 tsp chipotle powder
- 1/2 tsp baking powder
- 1/4 cup milk
- 1 egg
- Salt, to taste
- Oil, for frying
- For the Avocado Purée:
- 1 ripe avocado
- 1 tbsp lime juice
- Salt, to taste
Instructions

In a mixing bowl, combine the corn kernels, prawns, flour, cornmeal, chipotle powder, baking powder, milk, egg, and salt. Mix well until combined.

Heat oil in a frying pan over medium heat. Drop spoonfuls of the fritter batter into the pan and flatten slightly. Cook until golden brown on both sides, about 2-3 minutes per side. Remove from the pan and drain on paper towels.

For the avocado purée, scoop out the flesh of the avocado and place it in a blender or food processor. Add lime juice and salt. Blend until smooth.

Serve the fritters hot with a dollop of avocado purée on top.
