Ingredients

  • 1 cup corn kernels
  • 1/2 cup prawns, cooked and chopped
  • 1/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 tsp chipotle powder
  • 1/2 tsp baking powder
  • 1/4 cup milk
  • 1 egg
  • Salt, to taste
  • Oil, for frying
  • For the Avocado Purée:
  • 1 ripe avocado
  • 1 tbsp lime juice
  • Salt, to taste

Instructions

  1. In a mixing bowl, combine the corn kernels, prawns, flour, cornmeal, chipotle powder, baking powder, milk, egg, and salt. Mix well until combined.

  2. Heat oil in a frying pan over medium heat. Drop spoonfuls of the fritter batter into the pan and flatten slightly. Cook until golden brown on both sides, about 2-3 minutes per side. Remove from the pan and drain on paper towels.

  3. For the avocado purée, scoop out the flesh of the avocado and place it in a blender or food processor. Add lime juice and salt. Blend until smooth.

  4. Serve the fritters hot with a dollop of avocado purée on top.
