Ingredients
- 2 pounds of fresh mussels, scrubbed and debearded
- 2 tablespoons of vegetable oil
- 1 tablespoon of grated ginger
- 4 garlic cloves, minced
- 1/2 cup of soy sauce
- 1 cup of chicken broth
- 2 tablespoons of rice vinegar
- 1 tablespoon of honey
- 2 green onions, sliced
- 1 red chili, chopped
- 1 lime, cut into wedges
Instructions

Heat the oil in a large pot over medium heat. Add the ginger and garlic and cook for 1 minute.

Add the soy sauce, chicken broth, rice vinegar, and honey to the pot, and bring to a boil.

Add the mussels to the pot and cover with a lid. Cook for 5-7 minutes or until the mussels open up.

Discard any unopened mussels and add the green onions and red chili to the pot.

Serve the mussels hot with lime wedges on the side.
