How To Make Mussels in Spiced Broth

Ingredients
- 2 pounds fresh mussels, cleaned and debearded
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- 1 teaspoon cumin powder
- 1/2 teaspoon chili flakes (optional)
- 1 cup vegetable broth
- 1/4 cup white wine
- 2 tablespoons butter
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large pot, melt the butter over medium heat.

Add the diced onion, minced garlic, and grated ginger. Sauté until fragrant and the onion turns translucent.

Stir in the turmeric powder, paprika, cumin powder, and chili flakes (if using). Cook for another minute.

Pour in the vegetable broth and white wine. Bring the mixture to a simmer.

Add the cleaned mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels have opened.

Discard any mussels that haven’t opened.

Season with salt and pepper to taste.

Serve the mussels in bowls with some of the spiced broth. Garnish with fresh parsley.
