Ingredients

  • 2 pounds of fresh mussels
  • 1 tablespoon of olive oil
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper
  • 1 cup of heavy cream
  • 1/4 cup of chopped fresh parsley
  • Salt and pepper, to taste

Instructions

  1. Clean and debeard the mussels, discarding any that do not close when tapped.

  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.

  3. Add the paprika and cayenne pepper to the pot and stir well.

  4. Pour in the heavy cream and bring to a simmer. Cook for 5 minutes, or until the sauce has thickened slightly.

  5. Add the mussels to the pot, cover, and cook for 5-7 minutes, or until the mussels have opened.

  6. Remove from heat and discard any mussels that did not open.

  7. Season with salt and pepper, to taste.

  8. Sprinkle with chopped fresh parsley before serving.
