How To Make Leek & Mackerel Penne Bake

Ingredients

  • 8 oz penne pasta
  • 2 leeks, sliced
  • 1 can (8 oz) mackerel fillets, drained and flaked
  • 1 cup shredded cheese (cheddar or Gruyere)
  • 1/2 cup heavy cream
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish.

  2. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

  3. In a large skillet, heat the olive oil over medium heat. Add the leeks and garlic, and sauté until softened, about 5 minutes.

  4. Add the flaked mackerel to the skillet and stir to combine. Cook for an additional 3-4 minutes.

  5. In a separate bowl, mix together the cooked penne pasta, leek and mackerel mixture, shredded cheese, and heavy cream. Season with salt and pepper.

  6. Transfer the mixture to the greased baking dish and spread evenly.

  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

  8. Remove from the oven and let cool for a few minutes before serving.
