Ingredients

  • 500g prawns, peeled and deveined
  • 4 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon chili paste
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup bamboo shoots, sliced
  • 1 cup tofu, diced
  • 2 green onions, sliced
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large pot, bring the broth to a simmer.

  2. Add the soy sauce, rice vinegar, chili paste, ginger, and garlic. Stir to combine.

  3. Add the mushrooms, bamboo shoots, and tofu. Cook for 5 minutes.

  4. Add the prawns and cook until they turn pink, about 3-4 minutes.

  5. Season with salt and pepper to taste.

  6. Serve the hot and sour broth with prawns garnished with sliced green onions.
