Ingredients

  • 1 lb prawns, peeled and deveined
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp Sichuan peppercorns
  • 2 tbsp chili bean paste
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 cup chicken broth
  • 2 green onions, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a wok or large skillet over high heat.

  2. Add minced garlic, ginger, and Sichuan peppercorns. Stir-fry for 1 minute until fragrant.

  3. Add chili bean paste and stir-fry for an additional 1-2 minutes.

  4. Add prawns to the wok and cook until they turn pink and opaque, about 2-3 minutes.

  5. Stir in soy sauce, sugar, and chicken broth. Cook for another 2-3 minutes until the sauce thickens.

  6. Garnish with sliced green onions and fresh cilantro.

  7. Serve the spicy Sichuan-style prawns hot with steamed rice or noodles.
